With tequila lime vinaigrette

 

To make vinaigrette you will need:

 

The juice of 1 small lime (about ¼ cup)

1 overflowing Tablespoon of tequila

2½ Tablespoons extra virgin olive oil

1 teaspoon white wine vinegar

A bit of honey (sweeten to desired taste)

Himalayan sea salt (I used about 4 turns from a salt grinder)

Fresh ground pepper

Zest from ½ a lime (optional)

 

Mix all these together and set aside.

 

To make crunch bowl you will need:

 

½ cup raw sprouted quinoa (soak quinoa according to directions- about 30 minutes)

1 to 2 heaping handfuls of watercress

2 Tablespoon finely chopped red onion

1 small finely chopped jalapeno (optional)

2 Tablespoons of pomegranate seeds

1 to 2 Tablespoons of roasted, lightly salted pepita seeds

(I purchased these at #WholeFoods) but you could roast them yourself, just bake at 375 degrees for about 7 minutes

½ avocado sliced (or more)

A few generous slices of Cotija cheese crumbled

 

Mix all ingredients together, drizzle with vinaigrette, grab some friends, and enjoy with a glass of white wine.
